I’m seriously obsessed with frozen hash browns and I know that this kind of goes along with my previous blog on the hash brown pizza. This recipe didn’t have the intention of being blogged while I made it. I wanted a waffle……yet wanted something pizza-like (or as close as I can get it). When I cook, sometimes I just throw things together on a whim in hopes it will turn out. There have been plenty of flops in my kitchen, plenty.

My meal 3 on a rest day calls for 70g of chicken & 150g of russet potatoes. I subbed out some of my chicken for 2 egg whites and used frozen hash browns for my potatoes.
Use the amounts that are called for on your plan for the recipe.

• 2 egg whites
• Chicken breast, chopped
• Frozen hash browns
• Seasonings, amounts desired….Basil, Garlic, Oregano, S&P
• 2 tbsp of pizza sauce

1. Preheat waffle iron; coat with cooking spray if needed
2. Mix all of the ingredients together in a bowl
3. Pour and spread mixture into waffle iron; cook 10 minutes or until desired doneness. I used a Belgian waffle iron, if using a normal waffle iron cook time may be less.

Again this recipe was just on a whim. I’m sure you can add a few chopped veggies, turkey pepperoni, whatever you like on your pizza. Other options can be adding some shredded cheese on top and melt under broiler. If you want to try….I’m sure you can add some shredded cheese into the mixture prior to cooking in the waffle iron.
This satisfied the craving I was having for BOTH a waffle and pizza, plus it was filling
