Avocado Chicken Salad

In Lunch, Snack.

I’ve been obsessed with Avocado Toast for some time. It wasn’t until my current plan was delivered that I could make it fit on of my meals.

I decided to change it up and add my chicken to the mix

My plan calls for: Chicken, Russet Potatoes and Almond

I subbed my potatoes for a slice of bread / almonds for avocado

Here is a simple recipe to make, for a nice change if you want one. Please use amounts that are suited to your meal plan

Ingredients:

·       Chicken; chopped/shredded

·       Avocado

·       Red onion; diced

·       Celery; diced Optional (I opted out)

·       Cilantro

·       Cherry tomatoes; quartered, I use Cherub tomatoes

·       ½ -1 tsp Lime juice

·       Salt & Pepper to taste

·       ¼ tsp Garlic powder

·       ¼ tsp Cumin

·       ¼ tsp Chili powder

Directions:

1.       In a small bowl add the 1st 4 ingredients. Mash avocado and stir so everything is mixed together.

2.       Add the remaining ingredients; stir until it is mixed thoroughly. Add in more lime juice or any seasonings if needed. Add some chipotle pepper for some added spice

To serve:

·       Top on toast

·       Make a sandwich

·       Use lettuce wraps

·       Top on a lettuce blend

·       Fill tortillas with it
