Banana Bread Quinoa Bites

In Breakfast, food prep, Snack.

I was craving some of my Grandmother’s homemade banana bread that is no where near “on plan” and I thought I’d give this a try. This recipe goes along with the Quinoa Omelet Bites that I blogged. This is a sweet version that is also portable, easy to make, family friendly and can be prepped ahead for the week (or freeze for future meals). Great for breakfast or afternoon snack.

Please use amounts that fit your plan

Ingredients:

·       Quinoa; cooked

·       Egg whites

·       Banana; mashed

·       Cinnamon; dash

·       Sweetener; to taste

·       Salt; pinch (I love salty sweet)

·       ¼ – ½ tsp each; maple extract/butter extract

Directions:

1.       Preheat oven to 350, lightly spray a mini muffin pan with nonstick spray, set aside

2.       In a bowl mix, all the ingredients; until thoroughly combined

3.       Fill the mini muffin wells to the top with the mixture. OPTIONAL: add sliced banana on top after filling the wells. Bake for 20 minutes, remove from oven; let cool for 2-3min. If you need, run a knife along the edges to loosen

**Tip on quinoa to egg white ratio – about 1 cup of quinoa to 2 egg whites; so adjust to meet your meal plan**

·       Vanilla and banana extracts would work here too, along with any extract that you have

·       Instead of banana you can chop apples, slice strawberries, mashed raspberries, blueberries, cherries, no sugar apple pie filling……really, I could keep suggesting but I’m sure you got it

·       Add other spices if you’d like

·       Get creative with it
