Chicken Verde Cups

In Dinner, Lunch.

Here is an easy recipe that can be adjusted to fit any plan. Plus it’s a great recipe for the entire family.

My meal calls for:

·       70g chicken breast

·       120 calorie wrap

·       15g almonds

My subs using the calculator were:

·       3 Mission corn tortillas (3 for 120 calories)

·       Avocado and full fat cheese for my almonds


·       Corn tortillas

·       Diced chicken breast; cooked

·       2tbsp green chile salsa/enchilada sauce

·       Diced onion or pepper; optional and just a tablespoon

·       Seasonings; optional (garlic powder, cumin, chili powder)

·       Shredded cheese

·       Shredded lettuce

·       Avocado; optional

·       Pico de gallo or Salsa; optional


1.       Preheat oven to 375 degrees; lightly coat muffin wells with cooking spray. Make the tortillas pliable by warming for 30sec in the microwave. Press tortillas into the muffin wells; lightly spray with cooking spray. Bake 8-10min, let cool for a few minutes

2.       Meanwhile, mix together chicken, green salsa; optional seasonings and onion/bell peppers. Scoop mixture evenly into prepared tortilla cups, top with shredded cheese; bake 10-12min

3.       Top with avocado, pico de gallo, salsa or any hot sauce of your choosing and lettuce


·       Depending on your plan you can add refried beans or some rice

·       Use flour tortillas

·       Top with sour cream or greek yogurt – mix some garlic salt, cumin and a squeeze of lime into yogurt.

·       You can try this with ground turkey, ground beef, chopped steak or even shrimp

·       Fat free cheese

·       Olives

·       Red enchilada sauce
