Flank Steak Dinner

In Dinner, food prep.

Here is a super easy meal to make for the whole family or to prep for the week ahead

This is just a protein meal – carbs and fat can be added to complete the dish


·       1-2lb flank steak

·       Seasoning of choice; I had a bbq seasoning mix

·       Vegetables; cut into chunks such as bell peppers and onions


1.       Preheat oven to 400; foil line a baking sheet and lightly coat with nonstick cooking spray

2.       Coat both sides of flank steak with 1-2 tbsp of seasoning per side and lightly spray with nonstick spray

3.       Add your vegetables of choice to the prepared baking sheet; leaving space in the middle of the pan for your flank. Feel free to season your vegetables if you’d like; place the flank in the middle of the pan with the vegetables around it

4.       Cook for 10-12min. Once time is up keep the pan in the oven; raise temperature to 450 and keep baking 8-10min (don’t worry if the temp was reached toward the end of the 8-10min)

5.       Remove from oven, let it rest for about 5min

6.       Cut the steak against the grain and serve

·       You can do fajita seasoning for tacos, served with avocado, cilantro, greek yogurt, lime wedge and salsa

·       Teriyaki marinade and serve over rice with some avocado, pickled ginger, drizzled with sesame oil

·       You can keep it simple with salt, pepper, garlic and onion pepper

·       Also you can choose one of the many seasoning blends at your local store

·       You can also do green beans, asparagus, brussel sprouts, broccoli or any other vegetable that you prefer.
